Internship description (the tasks, responsibilities, benefits) :
The primary objective of this internship will be the exploration of seaweed applications in food, with a focus on:
- Product Development: Utilizing seaweed as a whole biomass in food formulations, including:
- Incorporating various types and concentrations of seaweed, both in rehydrated and non-rehydrated forms.
- Analysing the nutritional profile of the final food product, with particular attention to protein and fiber enrichment, salt reduction, and Nutri-Score improvement.
- Evaluating the influence of seaweed on key food product characteristics, such as functionality (during preparation, stability of the product, etc.)
- Processing Techniques: Conducting seaweed processing at both laboratory and pilot scale while assessing its impact on nutritional components.
Your internship will be carried out as part of 2 research projects (both national and international). It will be your responsibility to help develop an experimental design and to conduct the experiments.
During your internship you will join a large team of experienced and motivated food researchers. We are committed to good and personal daily guidance by 1 or 2 researchers who work on the seaweed related projects. We like to offer a learning environment where students have a chance to come into contact with various innovative processing and analytical technologies
Experience with the use of seaweed is not required, but we highly value the following personal qualities:
